Chef Osama “Fuji” Fujita brings a unique approach to Pacific Rim cuisine as Executive Sushi Chef at Loews Lake Las Vegas Resort’s Marssa restaurant. Chef Fuji’s culinary technique is grounded in the traditions of Japanese cuisine and is strongly influenced by the flavors of the Pacific Rim and the California coast.
As the only Master Sushi Chef in the state of Nevada, the Japan native brings with him years of culinary training and the ancient secrets of the Orient. Chef Fuji, the son of the personal chef to the Emperor of Japan, spent over a decade training under one of only three master chefs in Tokyo. Fuji immersed himself in Japan’s culinary scene at a young age and studied with some of the country’s most renowned chefs. He later brought his talents to the west when he moved to Los Angeles and worked as a sushi chef in the city’s Little Tokyo area and later in San Diego.
Fuji relocated to the Moroccan themed Lake Las Vegas Resort in 1999 and in his seven years at the resort, he has developed a following among the local residents, his peers and the press. Today, he can be found behind the sushi bar serving innovative dishes that delight the senses and satisfy every guest’s tastes.
Join Chef Fuji in Marssa restaurant for a private demonstration on the preparation and history of sushi. Chef Fuji will prepare a few of his favorite sushi rolls, teach you the basics of making sushi and explain all of the interesting facts about sushi and its history. After the sushi demonstration, guests will be seated for a sake tasting and lunch. Lunch will include a sampling of Chef Fuji’s sushi as well as a Pacific Rim-themed entrée and dessert.
